Fitness level, health consciousness, lifestyle (i.e. a Juice bar sounds like something busy but health-conscious people would want to eat to still get their fruit even though they're eating it on the go). There may also be a market for parents of young picky eaters - sometimes getting kids to eat their fruit is hard, so health-conscious parents would be looking for a way to get their kids to still get their fruit. You'll also want to consider salary or amount of disposable income your target market would have. You could overprice yourself out of a business, or you could undersell yourself giving the appearance of a cheap quality product or just not make as much money as you could.
