Issues With Pay & Store Management in my workplace..?

im not going to name details of where or what company it is that i work for just to protect my identity from my employers. ive been working for a coffee shop (e.g Cafe Nero's/ Starbucks) in the UK for over 2 years now part time. there has been increasingly more and more problems within our store. Problem 1. many members of staff including myself have noticed on our wage slips that after tax we have not received the correct pay for the hours we have worked, this usually happens to all or most of us on the same week. the amount we've been deducted can range from 2 hours pay - 10 hours pay (depending on the shifts we have worked) for example ..one week i worked 30 hours (this includes me subtracting my unpaid 30 min breaks, we can also check the time we clocked in and out of work) my wage slip came back and had my basic hours at 24.73 hours which means i'd lost our on 5/6 hours worth of pay. when this issue has been brought up at staff meetings etc our manager has claimed that its usually the payroll department of the companies fault and that the we would receive the pay in due time....this has never happened even though evidence we have gathered stating our hours worked has been provided. Problem 2. normally within the enviroment we work in tips are recieved and we are told all tips go into a jar of which our manager claims she shares out between all the staff. ive disscussed tips with staff from other stores, in most stores staff will recieve the shared out tips every month this money can range between £11 - £35 (this is for a part timer) now the issue within our store is that all the tips go into the jar, which when full the manager counts and changes into notes, these notes are kept in a cup in the store safe for several months. we dont receive our tips every month instead we recieve tips every 3-4 and some cases 5 months. so we recieved tips in december of 2008 the following occassion was april of 2009, which was the last time the staff in our store recieved tips (theres 10 members of staff in total in our shop, this doesnt include the manager and assistant manger) so the 10 of us each received £11 in an envelope which implies that there was (assuming equal divisions went to the managment means a grand total of £132 was gained in the tips between Dec and April. this seemed very suspicious because personally i would say we make alot more of than that in a month. only a small amount of us have access to the safe in the shop, in recent months we've counted the tips in the cup. in the last week sunday - there was £487 tips, 3 days later there was £234 no tips have been given to staff since april we all agree someone is stealing our tips either to add to the store takings or for their own personal gain. Problem 3 this has been a touchy issue within our store lunch breaks on average a member of staff works 8 - 10 hours we recieve one 30 min break that is all Problem 4 most members of staff within other stores do not pay for a staff meal on their lunch break, however within our store we pay for everything -25% staff discount. these problems have made all members of staff miserable within our store and thr staff turnover is quite high amonst the full time workers. among the part timers most of us have been working between 4- 5 years and we continue to notice the suspicious circumstances within our work place. can anyone clarify if my concerns are correct? and also if anyone can provide us with any advice? thanks for reading x
