I need some advice for an outline of an e-Commerce store.?

I need to find out a little bit of information before I begin an eBay niche and osCommerce store project that I have been thinking of doing for a while now. The main problem that I am having is filling in the blanks as far as my category outline for my products. I have done some research into it on my own, but I need some advice from some professional graphic designers, but I don't think what I need warrants bringing one in for the project full-time yet. If someone could give me some general advice or any resources that are available for organizing my product categories, that'd be great. My shop is going to be in the market of fish aquariums and kits and I will have 15 categories. What variables are the categories outlined on, usually? Is it price, availability, deliverability, what? If you could point me in the right direction that would be great, as I am at a loss of organizing my categories structurally. Thanks in advance!
