SWOT Analysis of selling sandwiches/rolls in a school canteen?

Basically can you think of a few strengths, weaknesses, opportunities and threats involved with this product idea, so far mine is a bit brief, thank you =)

Strengths: Loyal Customer Base, Potentially Large Volume, Simple tastes creating scope to source basic ingredients for higher profit margins. Weaknesses: Any bad rumours, or unhappiness with credit can spread very fast, and you may find yourself out of business after having placed all your eggs in one basket. Depending on the age group, may not be able to charge much. Opportunities: Could start selling things such as cake, low fat flapjacks, etc, to please the likes of Jamie Oliver. A total monopoly over students, giving way to the opportunity to cut costs even if it causes quality of product to lapse; they have no other choice but to buy from you. Threats: The possibility of one bad customer's experience causing a decrease in sales. Recent media hype and obsession with kids eating healthily could mean that you could be restricted on what you sell, like what has happened in the past. Causing your sales to dip whilst you devise an alternative.

If you are in the UK you would not be able to do so. Catering is in house and subject to stringent Health/Hygiene and safety rules. Plus you would have to have public liability Insurance in case anyone got food poisoning.
