I have a meat product I want to sell to grocery stores, How do I start a meat packaging business?

How do I get started? I want to produce, package and sell my own product. Do I have to get a food scientist to test my product for shelf life? What safety guidelines or measures do I need to take? Thanks!

You will have to comply with whatever applicable regulations of your local health department. In addition you should check with the USDA and see if your facility will require periodic inspections by them and to determine if your label design and wording (I am not kidding about this) must be approved by them. Other than that you have the normal zoning, licenses and regulations that apply to any business. Hope this helps Jerry-the-bookkeeper

I would assume the dept of agriculture (USDA) would be a good place to start.
