How many weeks after a new restaurant opens do u think it will stay really busy for?

I've found the first quarter of business is everyone trying out a new place with moderate advertising, passing trade and word of mouth.
But you will never know your pattern of trade for sure until 2 years of trade history

Uh ... NONE, unless the owner does a great job advertising the restaurant in advance. Getting regular business at a new restaurant is a big challenge - it doesn't happen automatically, even if the restaurant is in a busy place like a mall.
