If you learn the insides of SEO then you can go about like anyone would. It's a lot more than just keywords. A SEO expert knows submission directories, good page rank places to post links to, knows how to make links look legit, can mark your competition and drive your SEO campaign better accordingly, can get the best keywords which have the most traffic and lowest competition and can keep them safe, can drive SEM, PPC and other campaigns if needed by you. In short, even if you learns things it is quite safe to say that an SEO expert will be able to do the work you could do in about 1/6th the time if not less.
It's quite simple, you have paint software in your computer right? You know how to draw lines and brush right? How can an artist who has experience paint better then :) An SEO expert has that experience and knowledge. You could invest your time in learning this but be ready to spend some serious hours. And if you have the time you should learn and do it yourself, the best thing out of this is that you'll learn something new.
